Were these hymn-sings basically congregational singing by the church (not meaning that in a negative way, but trying to compare to what we might do at singing conventions, versus many church experiences which consist of the many listening to the few -- a group, choir, etc.)?

This was congregational singing by those in attendance, not all of whom were from the church. They were Sunday afternoon events, timed so folks from other churches in the area could get there and have a bite of lunch on the way. And there were a few nonchurchgoers.
